Prince Coffee is Coming to Schoolhouse

Spring is known as the season of renewal, and here at Schoolhouse, we have a regeneration of our own that we're excited to finally share. Opening this June, Schoolhouse Portland will house the newest cafe from Prince Coffee. “We are so excited to get up and running at Schoolhouse,” says Prince Coffee founder Katie Prinsen. “I love working with local companies and it’s an honor to open in such an inspiring space.”

For Schoolhouse, bringing Prince Coffee into the building provided the opportunity to partner with both a company and an entrepreneur that exemplified how ethical and aesthetic values could combine harmoniously. “Katie is an inspiring entrepreneur,” says Schoolhouse President Sara Fritsch. “Her energy, her approach, her team and her products align with our values and complement our brand. We are excited to refresh the space and share it with Prince. We look forward to having coffee again – for our employees and our customers.”

The new cafe will offer the same excellent espresso and fresh stroopwafels (the Dutch treat that sandwiches caramel between two perfectly crisp wafer-like cookies) that has earned Prince Coffee so many fans. According to Katie, it will also feature an expanded food menu similar to the one available in the Prince Coffee Beaumont location, but with a focus on sandwiches instead of toasts.

Founded by Katie, a coffee industry veteran, in 2016, Prince Coffee first set down roots in the North Portland neighborhood of Kenton. That original cafe still occupies an intimate space at the front of Revive Designs upholstery shop. It was here that Prince Coffee first attracted attention as one of the few places in Portland where you could purchase a freshly made stroopwafel. Katie has continued to bring success to the cafe by providing espresso of an uncompromising quality in spaces that are designed with equal care and attentiveness. 


Prince Coffee may be a local company, but their success is starting to reach far beyond the city limits. Recently, international travel and lifestyle magazine The Venue Report named the Beaumont location one of 2019’s Hottest New Cafe Openings Across the Globe.“We have always strived to make our Portland store a gathering place for people, regardless of whether shopping is there intention,” says Sara Fritsch. “Prince Coffee will add a delightful new dimension to that experience.” She adds, “Also, 2 words: fresh stroopwafels!”
